Ingredients
Flour, white, 1 1/3 cup Baking Soda, .25 tsp Baking Powder, 2 tsp Cocoa, dry powder, unsweetened, .75 cup Salt, .1 tsp Margarine - Take Control Light, 3 tbsp Egg whites, 2 largeVanilla Extract, .75 tsp Milk, nonfat, 1 cup Granulated Sugar, 1.5 cup
Directions
Pre-heat oven to 350 degrees F. Line 2 muffin pans with papers or foil liners. Sift together the flour. baking powder, baking soda, salt and cocoa. Set aside.
In a large bowl cream together the margarine and sugar until light and fluffy. Add the egg whites one at a time, beating well with each addition, then stir in vanilla. Add the flour mixture alternatively with the milk, beat well. Fill the muffin cups 3/4 full.
Bake for 15 to 17 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean.
Makes 24 cupcakes.

    It didn't work out. Don't fill the muffins 3/4 full because it overflowed when I made it. It sounds delicious, and maybe next time I'll make it where it's only half full. Sounds delicious though. - 11/25/07
