Fresh & Easy Tomatillo Pineapple Salsa

Ingredients
1 pound fresh tomatillos, husked, rinsed and quartered1/2 ounce fresh chili peppers (choose the kind that you prefer for more or less heat - I used seeded cerano peppers)1/2 large white onion, cut into large chunks6 ounces fresh pineapple, cut into chunks1/4 cup fresh cilantro1/3 teaspoon saltJuice of half a lime
Directions
Combine tomatillos, chilies, onion and pineapple in the bowl of a food processor fitted with the chopping blade.

Pulse until coarsely chopped. Add cilantro, salt and lime juice and pulse until desired texture. (It's going to be a little liquidy.)

Great with whole-grain tortilla chips, a dressing in a chicken taco salad, a topping for turkey burgers, along side veggie fajitas ... nice paired with cod or halibut ... possibilities are endless.

Makes about 5 1/2 cups. Nutritional info based on 1/2 cup serving.

    I made this for the fam for Cinco De Mayo last night along with my own guac. It was a bit bland for my taste so I added some cumin, red pepper flakes and a bit more salt. I also strained it before serving as I noted it was runny and it was. Will make again my way. - 5/6/21

    This was very yummy! I used your recipe more as a guideline, I didn't measure any ingredients and used milder peppers. My 3.5 year old daughter ate this with a spoon right out of the food processor! I had to take it away so my husband can have some when he gets home! Thanks for the recipe! - 10/27/09
