thick tomatoe sauce with red lentils

Ingredients
1 cup red lentils1 cup chopped onions1 medium apple chopped into small pieces8 tomatoes cut into medium pieces1 cup thickly slized zucchini1 tbsp olive oilfresh italian herbs (basil, rosemary, thyme, sage, chives)
Directions
heat olive oil in pot over medium heat
chop onion and apple and add, leave until onion is cream coloured and apple soft,
chop tomatoes and add
add water and lentils, use red lentils as these don't need to be soaked before cooking
leave on small to medium heat, you might to add some more water, the sauce should not be runny
when apple, tomatoes and lentils are well cooked add the thickly slized zucchini and leave for a few minutes, the zucchini should still be 'al dente'
add the herbs and pepper to taste
serve with your favourite pasta
