Chicken Pizza

1lb Chicken fillet - no skin1 cup green bell peppers - chopped1 cup red sweet peppers - chopped1 cup mushrooms - chopped1 cup white onion - chopped2 cloves garlic - crushedItalian herbsDried chilli flakes - 1/2 tsp1 can chopped tomatoes1tbsp extra light olive oil2oz mozzarella cheese
butterfly the chicken fillets and brush with the olive oil, rub a little ground pepper and griddled lightly on both sides. When lightly browned place on a oven tray (with sides).
brush a fry pan with the rest of the oil add garlic, onion, 1/2 herbs and chilli and lightly fry for 2-4 mins until onion soft, add the tomatoes, peppers & mushrooms. Bring to the boil, then lower heat to reduce - maybe 5-10 mins. When reduced spread over the chicken fillets, slice mozzerella over top and sprinkle rest of herbs over cheese. Bake in a medium oven for approx 20 mins. Check chicken is cooked through if fillets are a little thick. Leave out chilli flakes if not your thing. Serve with a nice green salad and maybe a baked potatoe.
