Whole Wheat and Flaxseed Banana Bread

1/2 cup brown sugar1/2 cup plain yogurt (nonfat)1egg 3 tbs canola oil3/4 cup unbleached flour1/2 cup whole wheat flour1/2 cup ground flaxseed1tsp baking powder1 tsp baking soda1 cup pureed ripe bananas (if not enough, can mix in applesauce)
Preheat oven to 375
Grease loaf pan
In large bowl, combine sugar, yogurt, egg, and oil. Blend until smooth. In medium bowl combine next 5 ingredients. Add to liquid ingredients. Don't over mix
Add bananas. Pour into loaf pan, sprinkle 1 Tbs sugar on top.
Bake 40-50 min.
Makes 1 loaf. Serving size calculated in a 9" loaf pan with nine 1" slices. Nutrition info will change if reducing sugar or substituting applesauce for oil.
