Wheat Dinner Rolls

2 cups all-purpose flour1 cup whole wheat flour2 Tbspn sugar1 envelope of rapid rise yeast3/4 tsp salt3/4 cup warm water (105-115F)2 Tspns Olive Oil1 egg or 1/4 cup of egg substitute
Combine water, sugar and yeast and mix till yeast is disolved. Add oil, salt and olive oil. Add flour until combined well enough that the dough is ready to knead. Knead in remaining flour. Let rise for 15 minutes. Punch down then spreay 9x9 inch pan with cooking spray. Divide dough into 16 equal parts and place in pan. Let rise for 20 minutes then bake at 400F for 10 minutes. Makes 16 rolls.

I made these with soup tonight. I didn't have rapid rise yeast so I just used regular active yeast, let rise for a little longer but was still impatient so I'm not sure if that is why they came out a little small or what. Either way, they were great. Definitely making these again. - 3/5/08
