Veggie Brown Rice

Ingredients
2 large onions, chopped4 carrots, chopped4 stalks celery, chopped2 tsp garlic powder1 tsp thyme1 bay leaf2 cups uncooked brown rice5 cups watersalt & pepper
Directions
Cook onions with olive oil and salt until soft. Add carrots, celery and spices, cook on medium-low heat covered for about 5 minutes. Add water and bring to a boil. Add brown rice, stir, and cook on low covered for 35-45 minutes until all liquid is absorbed.
