Corny Tuna Cakes

Ingredients
2 6oz cans Light Tuna in Water, drained1/4 c dry bread crumbs,3/4 c shredded reduced fat cheddar cheese8 oz can corn, drained1/3 c reduced fat mayonnaise1 beaten egg or 1/4 c egg beater
Directions
Combine tuna, 1/2 bread crumbs, cheese, corn, mayo, and egg in bowl. Shape into patties, coat with remaining bread crumbs. Warm oil in large skillet and fry patties until browned (4-5 minutes).

    This was a GREAT recipe! I changed a few things due to my own taste/items on hand. Crushed saltines and 1/2 C. of parmesan cheese (salt/pepper/parsley/etc. to taste) instead of bread crumbs; 2T. cream cheese instead of mayo, and 1-2 T. Zesty Italian dressing to mixture. - 4/11/11

    This was a great tasting recipe. I used frozen sweet corn and fine-crumbled ritz wheat crackers instead of bread crumbs. It was amazing-nice flavor too, thanks for a great tuna recipe- love it!
