Mango warm chicken salad

1 mango, sliced1 avocado, diced1 romain or butterhead lettuce in bite size pieces2 tablespoons pine nuts, toasted2 tablespoons orange juice (for dressing)1 &1/2 chicken breast (skinless)herbs or spices to your taste for seasoning chicken.tablespoon oil (vegetable or olive) for grilling
remove seed from both mango and avocado and chop into cubes.
wash and chop lettuce into bite sized pieces.
set aside.
in a clean pan toast pine nuts for a few minutes, moving them around all the time until golden, set aside
slice chicken into strips and coat in desired seasoning (I like dukkah or cajun) and grill in a hot pan or on a BBQ for 10 minutes.
mix all ingredients together and squeeze fresh orange juice over everything and serve.
