Twice Baked Potato Salad

4 lbs red potatoes, baked w/ skin on2 cups sour cream1/4 cup mayo w/ olive oil12 strips ready to eat bacon4 scallions2 T yellow mustard1 cup shredded cheese
Scrub potatoes and bake in a 350 degree oven for 1 hour; while potatoes are cooking, finely chop scallions and bacon; in same bowl, add sour cream, mayo, mustard and cheese. When potatoes are done, let cool slightly, cut into cubes and toss with prepared dressing. Eat immediately or chill and serve. Makes at least 15 servings.
