Southwest Breakfast Strata

Ingredients
6 slices whole grain bread, dried6 eggs2 tbsp. canned diced green chilies1/8 tsp. black pepper2 slices Canadian bacon or ham, diced2 tomatoes, diced2 oz. (1/2 cup) shredded cheese 1 tbsp. chopped cilantro or parsley (optional)2 cups blueberries
Directions
Spray a rectangular baking dish with cooking spray and cover the bottom of the prepared baking dish with bread slices. Beat together eggs, green chilies and pepper and pour over bread. Top with bacon, tomato and cheese. Cover and refrigerate for 4 to 24 hrs. Preheat oven to 350 F. Bake uncovered for about 25 min. or until a knife inserted in the center comes out clean. Sprinkle with herbs. Serve with blueberries.
