Five Cheese Spinach Quiche

Ingredients
1 clove garlic, minced1 onion, finely chopped (optional)2 cups fresh spinach, washed and drained1 roasted red pepper, sliced (optional)6 eggs, beatenSea salt and pepper, to taste1 tsp. Dijon mustard½ tsp. hot sauce, optionalAssorted fresh herbs (optional)1 cup light ricotta cheese1 ½ cups shredded cheese
Directions
Spray saute pan with cooking spray and saute garlic, onion and spinach until wilted. Meanwhile, beat eggs, salt, pepper, mustard, hot sauce and herbs together in a bowl. Spray a pie pan with cooking spray and add egg mixture, spinach mixture, red peppers and cheeses. Bake in a 375 degree oven until set and lightly browned on top.
