Red Lentil Curry Soup

1 Tbsp coconut oil1 large onion diced6 cloves garlic minced2 tbsp curry powder or to taste2.5 tsp cumin seedsDash of hot pepper flakes (optional)6 cups of water 1.5 cups red lentils rinsed and drained1 tsp salt1/2 cup cilantro to garnish (optional)
Heat coconut oil in a large stock pot add onions and garlic and saute for a few mintues. Add curry and cumin pepper flakes if using and cook until golden and fragrant. Add water and bring to a boil, add lentils, when water returns to a boil reduce to a simmer and cover lid loosely. Cook 15-20 minutes or until lentils are soft. Add salt when done and garnish with cilantro.
