Hominy-Pinto Burgers (just the patties)

Ingredients
1 med. onion2 cl. garlic1/4 t. salt15.5 oz can pinto beans, rinsed and drained15 oz. can hominy, rinsed and drained3/4 c. masa harina, divided1 T. canola oil
Directions
saute onion and garlic in a skillet cloated with cooking spary for 5 minutes. place onion mixture, salt, beans and hominy in a food processor; pulse until coarsely ground. combine bean mixture and 1/2 c. masa in a medium bowl. Divide bean mixture into 4 equal portions, shaping each into a 1/2 inch thick patty. dredge in remaining masa. heat oil in skillet and cook patties 4 minutes on each side.

    This was really yummy. I used whole wheat flour instead of the masa harina, and I coated it with yellow cornmeal. I also added cumin, chili powder, and cayenne. I cooked it until it was crispy and topped it with cheddar cheese and salsa. Thanks for sharing!! - 2/25/10
