Greek Cherry Pie

2 cups pitted cherries1/2c whole wheat flour1/4c packed brown sugar1/2c sugar (halved) 1/2c rose water (rose infused water)12 sheets phyllo dough1/4c liquid margarine
In saucepan on low heat, combine cherries, flour, rose water, brown sugar and half the sugar. Cook until thick. Pour into pie pan and let cool, pre-heat oven to 350 degrees. Layer 1 sheet of phyllo dough and lightly coat with margarine and sprinkle part of remaining sugar. Repeat 11 times with remaining phyllo and slit top in optional decorated pattern. Coat last layer with residual margarine and sugar and place in oven until browned.
