Eggplant Parmesan with hamburger (low carb)

Ingredients
1 eggplant, peeled1 cup Parmesan Cheese, grated2 cups Mozzeralla cheese, grated1 cup chopped red tomatofried ground beef, 200 gramsOregano, Basil, italian seasoning
Directions
Preheat oven to 375 degrees
Peel eggplant, cut into 1/4 inch thick round slices
lightly grease medium sized casserole dish and place ahlf of the eggplant on bottom.
Top with 1/2 cup parmesan, 3/4 cup mozzarella and tomato, sprinkle with spices
Repeat layers and again, sprinkle with spices
Cover with Aluminum foil and bake for 40 mins
Uncover and top with remaining mozzarella and spices and bake until cheese is melted.

    put into 3 qt cassarole dish covered for 45 min. Let stand for 15 more. don't forget hamburger as you layer - 9/27/10

    Very good recipe. I would change it slightly by adding a can of petite diced tomatoes (drained) instead of just the tomato. I would also add 8 oz. of tomato sauce. This was just a bit dry for our tastes. - 12/15/10
