Roasted Mediterranean Chicken

Ingredients
1 skinless chicken breat (~ 3 oz)1 tsp of red pepper1 Tbsp of extra virgin olive oil2 slices of roasted red pepper 1 Tbsp of plain yogurt 1 sprig (fresh) finely chopped parsley
Directions
per serving
1 skinless chicken breat (~ 3 oz)
rubbed with 1 tsp of red pepper and 1 Tbsp of extra virgin olive oil
place two slices of roasted red pepper on top
wrap in aluminum foil and grill for 6-8 minutes depending on thickness
place directly on grill for last few minutes to get grill lines
top with 1 Tbsp of plain yogurt with finely chopped parsley mixed in to cool the palate
