Egg Fried Brown Rice

Ingredients
1 1/2cups instant brown rice. (cooked)1 1/2 tbsp canola oil1 onion (diced)1 cup frozen mixed peppers2 eggs (beaten)1/2 tsp garlic powder1 tbsp soya sauce1/2 tsp salt
Directions
Cook 1.5 cups of instant brown rice according to pkg. instructions. (minute rice brand) Set Aside. In a skillet, add oil and heat, then add diced onion. Stir fry onion for 2 minutes, then add 1 cup of frozed mixed peppers (yellow, green & red). Stir fry for 2 more minutes, then add 2 beaten eggs. Stir fry together until eggs are well done. Add cooked rice, garlic powder, soya sauce and salt to skillet mixture. Stir to combine. Divide into 4 servings.
