Easy Lentil Soup

4 cups (400 g) green lentils, rinsed10 cups (1600 ml) water2 onions, chopped4 carrots, chopped4 ribs celery, chopped8 Yukon Gold potatoes, cubed3 cups vegetable broth2 teaspoon oregano2 teaspoon basil1 teaspoon crushed rosemary1/2 cup fresh parsley, chopped8 garlic cloves, chopped28 ounce can crushed tomatoes ground black pepper, to tastesalt, to tasteadditional seasonings, to taste
---Place lentils, water, and next 7 ingredients into large pot.
---Bring to a boil, stir well, cover pot, and cook over low heat until lentils are tender, about an hour. (Add additional water if it begins to dry out.) Add tomatoes, pepper, and salt, and taste to check seasonings. If necessary, add more to taste. Cook uncovered for at least 15 minutes, adding more water if it seems to thick, and stirring from the bottom often.
