Salad - Grilled Apple & Fennel Salad

Cranberry Vinaigrette:1 Cup fresh or frozen Cranberries1/3 Cup sugar1/4 Cup finely minced Onion1 tsp finely chipped Rosemary 1/2 Cup water1 tsp Dijon Mustard5 tbslp vegetable oil or extra virgin soya oilsalt & pepper to tasteSalad:2 Courtland or MacIntoch Apples1/2 head Fennel2 tsp Vegetable OilTraviso Radicchio, for presentation
Cranberry Vinaigrette:
Simmer Cranberries, sugar, onion and rosemary with 1/2 water untill cranberries "pop" about 20 minutes.
Remove from heat and cool to room temperature.
Whisk in Dijon mustard, then slowly whisk in oil. season to taste with salt & pepper.
Salad:
Preaheat grill on high heat.
Core apples and cut into 1/4 inch slices (do not peel)
Cut Fennel into slices of the same thckness (leave core in) and toss apples and fennel in oil.
Grill apples and fennel untill lightly charred on both sides, but still crunchy, about 4 minutes in total
To serve, arrange radicchio leaves on a platter and arrange apples and fennel over. Spoon cranberry vinaigrette over and serve.
