Zucchini & Tomato Salad With Feta & Basil Vinaigrette

Ingredients
1 Large Zucchini, cut into 1/2-inch pieces1 Large Summer Squash, cut into 1/2-inch pieces2 C. Cherry or grape tomatoes, halved1 C. Feta cheese, finely crumbled2 t. Dijon mustard2 T. Balsamic or red wine vinegar2 T. Fresh lemon juice2 T. Shallots, minced1 T. Extra Virgin Olive Oil2 T. Fresh Basil, chopped fine.5 t. Salt (or to taste)1 t. Black Pepper (or to taste)
Directions
Steam zucchini and summer squash for about 3 minutes, or until their colors turn bright. Remove from heat and run under cold water to stop the cooking process. Drain thoroughly and put into a large bowl with halved cherry tomatoes.

In a small bowl, whisk Dijon mustard, vinegar, and lemon juice together. Add shallots, and basil and slowly whisk in olive oil. Season with salt and pepper. Gently toss dressing in with zucchini, summer squash, feta cheese, and tomatoes.
