Chicken Lettuce Wrap

Ingredients
Directions
8 thin slices of chicken breast no skin1 cup of onions sliced.5 cup of red bell peppers sliced.5 cup of orange bell peppers sliced1 cup of can mushrooms1 garlic clove minced1 can of black beans1 head of large iceberg lettuce (use all the leaves)salt and pepper to taste1 cup of watercanola oil spray1 tbs of reduced fat sour cream1 cup of mozarella cheese
1. Season the chicken breast with salt and pepper.
2. On a hot skillet spray canola oil and add the chicken breast with 1/2 cup of water, let it cook and keep adding water until chicken is done.
3. On another skillet spray canola oil add garlic, onions, peppers, and mushrooms. Sautee until done.
4. Add the veggies to the chicken and mix well.
5. Blend the black beans until smooth and cook for 5 minutes.
Put it all together:
Take one lettuce leave, add beans, chicken and sour cream and sprinkle cheese
Makes 6 serving and each serving is 3 lettuce wraps.
