Jalapeno Polenta

Ingredients
1 cup yellow cornmeal2 14 oz cans fat free, low sodium chicken brothwater to make 4 cups liquid1 cup chopped jalapeno peppers
Directions
Bring chicken broth and water to a full boil. Slowly add in cornmeal. Add jalapenos and stir until thick. Pour into loaf pan sprayed with cooking spray. Cover an refridgerate until firm. Slice into 20 1/4 inch slices (approx. 1.5 oz each.) Makes 10 2-slice servings.
