L.R. Molasses Crackles

Ingredients
1/4 cup butter, softened192 g (shy 1 cup) brown sugar1 large egg1/4 cup black strap molasses120 g (1 cup) whole wheat flour, freshly ground110 g (1 cup) millet flour, freshly ground2 tsp. baking soda1 tsp. cinnamon1/2 tsp. salt1/4 tsp. ground cloves1/4 tsp. ground ginger1.6 oz. (1/3 cup) crystallized ginger, finely chopped1/3 cup sugar
Directions
Preheat oven to 375. Beat butter,sugar and molasses in a large bowl with an electric mixer until creamy, about 2 minutes. On low speed add egg, beat just until mixed. In another bowl, combine, flours, baking soda, cinnamon, salt cloves and ginger. Add crystalized ginger and mix well with hands. Add this mixture a little at a time to creamed mixture until well incorporated. Spray 2 large cookie sheets with non-stick spray. Place 1/3 cup sugar into a small bowl. Drop cookie scoopfuls of dough into sugar. Roll around until covered with sugar. Place on cookie sheets and flatten slightly with fingers. Bake for 10 minutes. Remove from oven and leave on the cookie sheets for a minutes or two to firm up. Remove from cookie sheets and cool on counter top. Makes 22 cookies using pampered chef's small cookie scoop.
