Curried Rice Mix

Ingredients
2 cups uncooked long grain rice1 cup chpped dried mixed fruit1 cup slivered almonds1/2 cup golden raisins2 TBSP dried minced onion4 tsp beef bouillon granules4 tsp curry powder1 tsp saltADDITIONAL INGREDIENTS FOR RICE:2-1/2 cups water
Directions
In a large bowl, combine the first eight ingredients. Store in an airtight container in a cool dry place for up to 3 months.

YIELD: 2 batches (4 servings per batch)

TO PREPARE RICE: Place water in a medium saucepan; bring to a boil. Add 2 cups rice mix; reduce heat. Cover and simmer for 20 minutes, or until liquid is absorbed.
