Easy, No Bake Strawberry Shortcake

Ingredients
1 Single-Serve Tub of Sugar Free Vanilla Pudding (3.75 ounces)1/3 cup Cool Whip Free2 Tbsp Sugar Free Strawberry Jam/Preserves4 Reduced Fat Nilla Wafers
Directions
Mix the pudding, Cool Whip, and Jam together gently until thoroughly integrated. Put one Nilla Wafer in the bottom of a cup cake paper. Spoon 1/4 of the mix over the Nilla Wafer. Freeze for 1 hour. Serve immediately (so it's not rock hard, but nicely chilled).

Makes 4 servings.

OPTIONAL: Top with a slice of strawberry (or your fresh fruit of choice). You can also use any flavor of preserves/jam. All kinds of Cool Whip (Sugar Free, Lite, Regular, Fat Free) work, but the nutritional content will need to be adjusted if you use something else. You can also use fruit flavored pudding if you choose. You can make this ahead of time and refrigerate, but it's important to only freeze for 1 hour so it's not too hard.

    I really enjoyed this recipe! I ended up using strawberry topping instead of jam, and Cool Whip Lite instead of sugar free, so my calories were about 69 instead of 34 per thing, but it was very good! I think you could also add one more Nilla wafter to the mix. Overall, it was super tasty! - 6/19/10
