Peach Pie with Quinoa Walnut Crust

CRUST1 1/2 cups dry quinoa1/2 cup chopped walnuts3 tbsp olive oil1/2 cup light soy milk2 tbsp organic maple syrupFILLING5 cups peaches or nectarines (about 7 medium) peeled and sliced1 cup unsweetened apple juice1/4 cup tapioca flour dissolved in 1/4 cup cold waterpinch sea salt
Preheat oven to 350 degrees. Place quinoa in a dry blender and grind until it becomes a fine flour. Place in a mixing bowl. Coarsly grind walnuts. Add to the quinoa flour. Add oil, soy milk and syrup. Mix thoroughly. Press into a 9" pie plate. Pre-bake for 10 minutes.
Meanwhile, plave peaches, juice and salt in a medium saucepan and bring to a boil. Reduce heat to low and slowly add the dissolved tapioca. Stir constantly to prevent lumping. When it is thickened, pour into crust and bake for another 10 minutes in oven.
Remove anf cool before serving.
