Caramel apple tartlets

Ingredients
2 1/2 c finely chopped fuji apples24 wonton wrappers1/4 c brown sugar (unpacked)2 tablespoons light whipped butter1 tablespoon Cornstarch1/4 teaspoon cinnamonOptional topping: fat free Reddi-whip
Directions
Pre-heat oven to 350 degrees

Prepare a 12-c muffin pan by spraying with nonstick spray then place wonton wrappers over the cups (layered one on top of another) press down lightly w/ your fingers so the dough creates a cup shape. Bake in the oven 8-19 min until lightly browned. Set aside to cool

1 small unheated pot, combine butter, brown sugar, cornstarch and cinnamon w/ 1 tablespoon water. Stir until ingredients have mostly dissolved.

Over med. heat cook and stir brown sugar mixture until it thickens to a caramel sauce like consistency

Reduce heat to low and add the apples. Cook for 3-4 min until apples have softened stirring continuously so filling doesn't burn

Evenly distribute filling among the 12 shells. top w/ whipped topping

Makes 12 cups -- 6 servings size: 2 tartlets per person
