Red Lentils, 1/2 cup Green Lentils 1/2 cupOnions, raw, 1 small Zucchini, 1.25 cup, sliced Carrots, raw, 1 small (5-1/2" long) Celery, raw, 1 stalk, large (11"-12" long) Red Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.) Cabbage, fresh, .25 cup, chopped *Cumin , 1 tsp Chili powder, 1 tsp **Flax Seed, 1 tbsp Salt, .5 tsp Pepper, black, 1 tsp 2 cloves of garlicFresh basilOlive Oil Cooking spray
Spray a large saucepan
Add chopped onions, then celery, then carrots, then patatos, then cabbage, then zuccini.
Saute until onions begin to turn clear
Add the lentils
Cover with water
Add the spices
Cook for at least 30 minutes, until the lentils are tender.
Add 1 clove of garlic and the basil in the last five minutes of cooking.
Serves 6
