1 13 oz. can of chicken breast in water1 oz peanuts, crushed1 T red wine vinegar (or to taste)salt and pepper to taste1 medium cucumber peeled, seeded and diced4 Tbsp reduced fat mayonnaise
Directions
Mix all ingredients together for a chicken salad sandwich.

    I just made this salad so that it would be nice and cold at lunchtime today. I tasted a tiny bit and think it's fabulous. Problem is.....It makes 6 servings and I can't imagine 1 serving is giong to even cover my one slice of bread I plan to eat with it. - 4/10/10
