Coconut-Curry Chicken with Brown Rice

Ingredients
1/2 cup LIGHT coconut milk2 tsp curry powder3 oz cooked chicken breast, cubed2 cups frozen stir fry vegetables3 oz plain low-fat yogurt2 scallions, chopped1/2 cup precooked brown rice
Directions
Saute coconut milk, curry powder, chicken and veggies for 10 minutes. Top with yogurt and scallions. Serve with warm rice.
