Stuffed Zucchini Boats

4 small zucchini (7 in long) halved lengthwise2 tsp olive oil3 cloves garlic, minced3/4 cup chopped onion3/4 cup crumbled low-fat feta cheese1/4 cup shredded low-fat Swiss cheese1.5 T whole wheat flour1 egg, lightly beaten2 egg whites, lightly beaten2 T chopped fresh parsley1/4 tsp black pepper
1. Scoop out zucchini flesh, leaving about 1/2 inch shell. Place shells in 13x9 sprayed with nonstick spray & set aside.
2. Preheat oven to 375. Heat oil over medium heat.
3. Chop zucchini flesh and saute in oil with garlic and onion until soft, about 5 minutes. Remove from heat
4. In medium bowl, combine remaining ingredients and mix well. Add zucchini mixture and toss to combine.
5. Spoon into zucchini shells and bake until heated through, about 30 minutes. Serve immediately.
