Ingredients
6 c. rolled oats (I used Bob's Red Mill Extra Thick Whole Grain) 2 1/2 c. mixed nuts and seeds: walnuts, almonds (whole and slivered), cashews, sesame seeds, flax seeds, sunflower seeds, pumpkin seeds1 c. shredded unsweetened coconut 1 t. cinnamonpinch ground cloves1/3 c. honey1/3 c. maple syrup1 t. vanillasalt1 c. dried berries (mix of cranberry, blueberry and strawberry)1/2 c. raisins (golden and regular)
Directions
Heat oven to 350 degrees. In large bowl, combine oats, nuts, seeds, coconut, spices, honey, syrup and vanilla. Sprinkle with a little sale. Toss to combine well. Spread the mixture on a rimmed baking sheet and bake 30 minutes or a little longer, stirring every 10 minutes or so. I like dark, crunchier granola, so my batch cooked for closer to 40 minutes.

Remove pan from the oven and add dried fruits and raisins. Combine. Cool on rack until granola reaches room temperature.

Bittman says this will keep indefinitely if stored in the refrigerator in a sealed container but I question the need for indefinite storage as it will be long gone before it has any chance of going stale!!

Makes approximately 40 1/4-cup servings.

I reduced the amount of honey and maple syrup, added only cranberries and golden raisins. This is WONDERFUL! - 6/10/09

This recipe has now become my new weekday lucnh. I has been an extraordinary hot summer in Texas this year and I do not get hungry but this has been a lifesaver. I half the serving and mix it with 1/2 a serving of yougurt. YUM!! and filling too! The family love it too. - 7/8/09

I was surprised at how easy and cost effective it was to make my own cereal. I decided to use pumpkin seed oil and omit the coconut to give it a longer life span. I definitly recommend others try making homemade granola - 6/22/09

Anyone believing this granola is not loaded with sugar and fat is delusional. I love Mark Bittman, however this granola should be treated like eating candy or cake. The sugar content is not provided however it is 75% fat and sugar. - 2/16/11

This was great I used light maple syrup, for lower calories. It was great, next time I am going to try sugar free syrup, sense my son is a diabetic. - 9/7/09

I like this recipe. I'm good for the Anything Goes way of cooking. The only changes I made was no coconut, and substituted mashed ripe bananas into the mix instead of maple syrup. YUM! - 9/26/19

OK, a little dry for my taste. Tweaked it a little already, will add a Tbsp of olive oil if I make it again. - 7/5/12
