Fresh Lentil Salad

Ingredients
2 cups lentils, uncooked1 red bell pepper1/2 cucumber5 baby carrots3 T fresh cilantro2 T fresh parsley1/2 lemon, juice and zest2 T extra virgin olive oil1 tsp seasoning salt
Directions
Wash lentils thoroughly and boil until tender, about 20 minutes.

Chop veggies and herbs into bite-sized pieces.

When lentils are done, rinse them in cold water to stop the cooking process.

Mix lentils and veggies gently.

Add lemon juice, olive oil, and seasoning to taste.

Can add any combination of veggies, herbs, and dressing.
