Turkish Red Lentil Bride Soup

Ingredients
4 tbsp butter3 cups chopped onion1 tsp paprika1 cup red lentils washed and picked over1/2 cup bulgar wheat2 tbsp tomato paste8 cups stock , beef, chicken, or whatever you have1/8 tsp red pepper flakes or to taste1 tbsp mint leaves (optional)
Directions
Heat butter and saute on low heat till soft. Add paprika, lentils and bulgar, stock and hot peppers. Bring to a boil and simmer till soft. If using brown rice, it will take about 45 minutes. It will be less if using bulgar, quinoa or white rice. When ready to serve add mint leaves if using.
