Scrambled Eggs Without Milk

Two EggsTwo Tablespoons water
Two ways to cook eggs:
1.) Put eggs in a microwave safe bowl. Mix eggs until all yolk and white are mixed well. Add two tablespoons water, mix well. Cover with plastic, being sure to keep a corner of the plastic vented. Cook 30 seconds, stir, and cook another 30. If eggs are not fully cooked, I add 10 seconds at a time until they are done. Using 10 second Increments insures the eggs don't get over cooked.
2.) Spray a nonstick pan with very little cooking spray. Heat the pan, add eggs and cook to liking.

I rarely even purchase milk since I live alone and it spoils before I can drink half of the container. However this makes my mornings SO much easier knowing I can make something other than a fried egg. 60 seconds to 'cook' while my toast is in the toaster and no pans to wash after. :) Thank you! - 7/14/11
