Ricotta Stuffed Peppers

Ingredients
Yellow Peppers (bell peppers), 4 pepper, Ricotta Cheese, part skim milk, 2. cup Mozzarella Cheese, part skim milk, 8 oz Parmesan Cheese, grated, .3 cup Garlic, 1 tsp Egg, fresh, 2 large salt & pepper to taste parsleybreadcrumbs for topping
Directions
Cut peppers in half
clean out seeds
put in glass casserole cut side down microwave 5 minutes until soft but not mushy
Let peppers cool
While peppers are in microwave
Mix ricotta, mozzarella, grated cheese, parsley, egg s&p
Once peppers are cooled fill each pepper half and top with some breadcrumbs and a mist of olive oil
Bake in 350 oven 20-30 minutes
