chicken cottage cheese meatloaf

Ingredients
2lbs ground chicken boob1lb ff cottage cheese2-10oz cans tomatoes w/green chilies, extra hot1/2 avocado2pkg frozen spinachdiced onion and garlic to taste1/2cup egg substitute
Directions
Mix all ingredients together very well. Heat oven to 350 while pressing mixture into loaf pans (I have two medium ones, it didn't all quite fit so I put the remainder in a muffin tin, hence the odd number of servings). Cook until well done, 50-60minutes depending on exactly what you're cooking in.
