Spinach Mushroom Salad

Dressing: Mix and Marinade for several hours1 1/2 Tbl Poppy Seeds3/4 Cup White Vinegar1 1/2 Cups Vegetable Oil3/4 Cup Sugar1 1/2 Tbl Grated Onion1 1/2 tsp Salt3/4 tsp Dijon MustardSalad: Wen ready to serve pour dressing over and mix.1 (10oz) Bag of Spinach with stems removed1 Med. Head of Iceberg Lettuce1 Cup Non-Fat Cottage Cheese3/4 lb Swiss or Mozarella Cheese1/2 lb. Bacon, cut into 1/2 inch pieces, then cookedBefore serving add: 3/4 Fresh Mushrooms, sliced 1 sliced purple onion
1- Mix together in a pour spout bottle the Dressing ingredients. Put in the fridge for several hours.
2- Cook Bacon according to package directions. (To reduce Fat and Calories Bacon can be subsituted for Baco Bits or Turkey Bacon). Drain fat and allow to cool before adding to salad.
3- Combine Spinach, Lettuce, cottage cheese and Swiss or Mozarella Cheese and Bacon, Toss together.
4- To finish before serving toss in Salad Dressing and mushrooms and top with Purple Onions.
