Mediterranean Couscous

Ingredients
1.C Coucous30 Olives1 Red Bell Pepper1 Purple Onion2 Roma Tomatoes1 Peeled Cucumber10 Pieces of artichokes hearts marinated in oilOne bunch of Cilantro3 cloves of garlicPepper to taste
Directions
Boil 2 Cups of water. Put the couscous in the water, cover and remove from heat. Let sit ten minutes and then fluff with a fork.
Chop all of the vegetables and combine in a large bowl. Chop the cilantro and mince the garlic. Combine all of the ingredients and refrigerate. Top with feta cheese beforing serving.
Note: The feta cheese was not inlcuded in the calorie calculation. Please use your own taste and discretion.
