Catherine's Enchiladas

10 -100 calorie Flour Tortillas20 oz Lean Beef, sirloin or better3 cans of Ortega Enchilada Sauce.5 cup chopped onion8oz Cheese1 packet taco seasoning
Brown beef and drain, add onions and taco seasoning with a little water and a few tablespoons of enchilada sauce.
Simmer.....
While simmering get 2 13x9 pans and put a small amount of enchilada sauce to wet the bottoms to prevent tortillas from "sticking".
put approx. 2oz of meat in each tortilla with a small handfull of cheese. roll and place in pan seam side down. Repeat 9 more times...
Cover theEnchilads with remainging sauce and top with remaing cheese. cover and Bake at 375 for 20 mins. or bubbling
