Chicken Carrot Pilaf

Ingredients
1.0 tsp Parsley, dried5.0 medium Carrots, raw0.5 cup, pieces or slices Mushrooms, fresh1.0 medium (2-1/2" dia) Onions, raw0.25 cup, chopped Peppers, sweet, red, fresh1.5 cup White Rice, long grain, cooked4.0 cup Knorr Chicken Stock Cube4.0 serving Skinless Boneless Chicken Breast59.0 gram(s) Pure Olive Spread
Directions
In a large skillet brown chicken in butter . Remove and keep warm. Add rice, carrots, onion, mushrooms and red pepper to the skillet. Cook and stir until rice is browned and onion is tender. Stir in broth. Place chicken over rice mixture. Bring to a boil . Reduce heat, cover and simmer for 20-25 min. or until rice is tender Stir in parsley Let standing 5 min. before serving.
