Melissa's Rendition of an Edamame Salad

2 bags of shelled edamamewhite wine vinegar (about 2.5 Tbs.)extra virgin olive oil (about 2.5 Tbs.)rice vinegar (1 Tbs.)1 red pepper5 bits of sun dried tomato2 pieces of artichoke heart2 cloves of garlic1 medium cucumberreduced fat crumbled feta cheese (about 1/2 container, or 2 oz.)fresh chivessalt to tasteonion powder to taste
estimated serving size: 14
prepare oil, vinegar, chives, sun dried tomato and artichoke hearts and let sit. (chop up what is needed.) mince the 2 cloves of garlic and add to the mixture.
prepare edamame (i buy frozen, so i just microwaved it)
chop up pepper and cucumber and hand add to edamame in a larger bowl.
mix the oil/vinegar into the salad. add the feta and mix.
add salt and onion powder to taste. :-)
more of a mellow tasting edamame salad--on the lighter side.
