Oil and vinegar potato salad

Ingredients
2 medium russett potatoes, boiled, peeled, and cooled, cubed3 Tbs olive oil4 Tbs red wine vinegar2 cloves garlic, chopped6 kalamata olives, pitted and halved1 Tbs dried parsley
Directions
Mix all ingredients except potatoes, then stir in potatoes. Let sit overnight.
