Bran Muffin

Ingredients
6 C whole wheat 2 C boiling water1 C Butter Crisco1-1 1/2 C sugar4 eggs1 qrt butter milk5 C flour5 tsp baking soda1 tsp salt1 C raisin (optional)1C walnuts(optional)
Directions
Place 2 C bran in bowl, adding 2 C boiling water, set aside. Cream shortening, sugar & eggs together, add buttemilk, remaining bran and the bran-water mixture, blend until smooth. Sift together dry ingredients and combine with creamed mixture. Add raisins and nuts as desired. Using an ice cream scoop fill greased standard muffin cups ( generous scoop usually right amount to fill muffin cup about 3/4 full). You can bake all muffins and then freeze or place batter in air tight container and bake 6-12 daily. Batter last about 10 days.
