Sweet Italian Chicken

Ingredients
1 lb boneless skinless chicken breast tenders (cut into bite sized pices)1/4 c olive oil1/4 c water1/2 c balsamic vinegarsalt and pepper TT1 tsp red pepper flakes2T capers1 c fresh basil2T thyme1 pint cherry or grape tomatoes12 oz cooked pastaparmesan cheese (opitional)
Directions
Put chicken, olive oil, water, balsamic vinegar, salt and pepper, red pepper flakes, capers, basil, and time into a container to marinate at least 1 hour but over night is pest.

Pour chicken with marinade onto jelly roll pan and add tomatoes. Broil 7 inches from top in oven for 7- 10 min until chicken is cooked through. Toss with pasta and cheese if desired.

    I liked this a lot. I did throw it on pasta but didn't include the parmesan cheese, and it was very tasty. I did have a little trouble cooking it, as it was nowhere near done after broiling for 10 minutes (I ended up baking it at 375 for 20 minutes after broiling it, and that worked). - 4/18/09

    I am so sorry about it not cooking. I forgot to put in the recipe that the chicken is suppose to be cut up into bite sized pices and then it really does cook in 10 mins. I am so so sorry. I fixed the recipe so it doesn't happen to others.
