Ingredients
1 can Black BeansOnions, raw, .5 cup, chopped2 tbsp bottled minced garlicCanola Oil, 1tsp Yellow Sweet Corn, Frozen, 0.25 cup kernels Mushrooms, fresh, 0.5 cup pieces Bread crumbs, dry, grated, seasoned, .5 cup
Directions
Heat oil in skillet. Chop onions and mushrooms into small pieces & add to heated oil along with 2 tbsp canned minced garlic. While veggies are cooking, mash drained and rinsed black beans with a fork (they will be mushy, but you will still be able to see the skins- they need to stick together well). Add frozen corn to veggies in the pan & stir well. Add bread crumbs to black beans & mix until you can"t see them anymore. Continue cooking veggies until onions are translucent & garlic is turning golden. Add veggie mixture to black bean mixture & combine well. Divide mixture into 6 even sized balls & refridgerate for 1 hour. Remove from fridge & press flat under plastic wrap to make a burger patty. Cook on heated skillet sprayed with 0 cal 0 fat cooking spray until brown & crispy on both sides. Serve like you would a normal burger, or my way which is folded in a tortilla with pepperjack cheese & salsa.
