Spicy Chicken-Lime Soup

Ingredients
1 pound skinless chicken breast 2 cloves garlic, minced3 1/2 cups chicken broth 1 tablespoon lime juice2 ounces diced green chiles 2 tablspns chopped cilantro10 ounces diced tomatoes with Chiles (AKA Ro-Tel)1/2 teaspoon ground cumin1/4 cup shredded cheddar1 yellow onion Tortilla chips
Directions
Boil and shred chicken. Chop onion.
Combine the chicken broth, green chiles, tomatoes with chiles, onion, garlic and shredded chicken in a soup pot. Bring to a boil, stirring frequently. Reduce heat to simmer for 10 to 15 minutes.
Add lime juice, cilantro, and cumin. Simmer for 7 to 10 minutes longer.
Serve with chips and cheese.
