Cornmeal Muffins

Ingredients
¾ cup (175ml) cornmeal1 ¼ cups (300ml) milk1 cup (250ml) all-purpose flour1/3 cup (75ml) granulated sugar1 tbsp (15ml) baking powder½ tsp (2ml) salt1 egg¼ cup (50ml) vegetable oil
Directions
1. Combine cornmeal and milk. Let stand 10 minutes.
2. Combine flour, sugar, baking powder and salt in a large bowl.
3. Add egg and oil to cornmeal mixture. Mix well. Add dry ingredients, stirring just until combined.
4. Fill greased muffin tins, or use muffin cups, 2/3 full.
5. Bake at 4000 F (2000 C), in a pre-heated oven, for 15 to 20 minutes. Makes 12 muffins.
