Tempeh Spinach Pie

Crust: 3 tbsp tahini1/4 teas salt1/2 c white flour3/4 c whole wheat pastry flour1/4 c soy milkMarinade: 1/2 c apple juice1 Tbsp sesame oil2 Tbsp tamari3 cloves garlic, chopped1/2 teas red pepper flakes2 teas gingerone 8 oz. package tempehtwo 10 oz. packages of frozen spinach, thawed
Thaw spinach.
Whisk marinade, then crumble tempeh into it and let sit for 30 mins.
In food processor combine dough ingredients, adding soy milk by the tablespoon until it clumps together. Roll out dough as thin as it will get (around a circle with 1 ft diameter).
Once tempeh has marinated, saute for 8 mins, then add spinach and cook another 5 mins.
Place rolled dough on a greased cookie sheet, then place filling on top of it, spread out.
Fold dough up and crease to make it look like a pie.
Bake 30 mins at 375. Cool 10 mins before eating.
